Halfway through the shaving process, you can see the built up tartrates on the left, nice fresh oak on the right.
A fire is used to heat the oak. This enhance the release of oak flavours, add a medium toast characteristic and help reseal the staves.
Knock the heads back in and fill them up with some lovely 2012 Sally’s Hill Merlot.
